A small, local business, LiLLiPiES Bakery, needed architectural assistance in transitioning from selling baked goods at the farmers' markets in Princeton and West Windsor to becoming a fully-fledged commercial kitchen and attractive small eatery. The owner of LiLLiPiES knew that Knight Architects had successfully helped another local restaurant with its design and construction, so it seemed a perfect fit for its own transformation. We looked at several options with the owner who eventually choose a highly visible retail space in a local shopping center. Located on a corner with lots of windows, the space is large enough to handle a generous kitchen in the "back of the house" as well as a sleek "front of the house". White subway tile walls, black enamel hanging lights, white marble counter with black stools and small tables make it a pleasant place to converse, grab coffee, bakery items and lunch. With the assistance of AKF Group LLC, as engineers and Elrath Construction, a blank space became an inviting addition to Princeton coffee, bakery and lunch spots. In addition to baking for its retail customers, catering and small distribution of goodies throughout Princeton,LiLLiPiES also offers cooking lessons in its state of the art kitchen.
